Coq au Vin
During the romantic Camelot years of the administration of President John F. Kennedy, French cooking became popular among homemakers preparing dinner parties. Glenna remembers coq au vin, or chicken in wine, as a very reliable standby. Even though we took a few liberties with the preparation of this classic French dish as we adapted it to the slow cooker, the results aren’t any less spectacular.
Preparation time: 25 minutes
Cooking time: Low 6 to 7 hours
Yield: 4 servings
2 tablespoons olive oil
2 pounds boneless chicken thighs, skin removed and trimmed of all visible fat
1 1/2 cups chicken broth
4 strips uncooked bacon, chopped
4 small onions, quartered
2 cloves garlic, crushed
1/2 cup dry red or white wine
1 bay leaf
2 teaspoons herbes de Provence or Italian seasoning
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/3 cup all-purpose flour
1/4 cup water
10-ounce package white mushrooms, washed and sliced thin (see Figure 8-2)
2 tablespoons minced Italian flat-leaf parsley
